This recipe will make about 28 balls and at only 115 Calories each, they make a great low Cal snack for on the go!
200g cooked beetroot (about half a vac pack)
2 ripe bananas chopped
2 tbsp honey
150g blanched almonds
1 tsp cinnamon
To coat: 8 tbsp chia seeds, desiccated coconut, chopped nuts or cocoa powder
1. Dry roast your almonds over a medium heat then leave to cool.
2. Puree the banana and beetroot in a food processor. Add the oats, honey, toasted nuts and cinnamon and process again until you have a smooth mixture. Chill for 30 min.
3. Tip the chia seeds desiccated coconut, chopped nuts or cocoa powder evenly on to a plate.
4. Roll the chilled mixture in to small balls and roll them into the chia seeds to coat. Place on a lined plate and chill in the fridge for an hour.
