As a mum of 2 young boys, life gets very busy but I try not to let that get in the way of providing them with nutritious snacks, particularly in their packed lunches. It is all too easy to get caught up in sending them to school with overly processed granola bars and biscuits because, of course, time is the essence!
With that in mind, I decided to come up with some really quick and easy recipes that can be prepared in batch at the weekend to last the week. Here is one of my favourites – Proaties! They are extremely nutritious as they are full of protein, fibre, healthy fats, vitamins and minerals. They are also a great source of slow release carbohydrates to keep energy levels up any time of the day. Most importantly, however, they taste great!!
