Who said a sweet treat cant be good for you? Here is my recipe for a really easy courgette cake that is:
- Simple, quick, nutritious and delicious!
- Only 75 Kcals per portion.
- Only 2g fat.
- No added sugar .
- A healthy snack time of the day.
Don’t be put off by the addition of courgette, it has a lovely mild texture that adds sweetness and depth whilst contributing to your 5 a day. My boys love helping me make this cake but of course, they love eating it even more! It makes a perfect addition to their lunch box and doubles up as a great breakfast on the go too.
