Luca’s pea and ham soup

If you love a good soup, why not give Luca’s really simple pea and ham recipe a go?

He used a gammon joint here but you could make it even simpler by buying some ham hock from your local butchers.

It is delicious served with a dollop of creme fraiche and some toasted sourdough.

You will need:

  • 1 chopped onion
  • 1 tsp olive oil
  • 600g frozen peas
  • 600ml vegetable stock
  • cooked gammon or ham
  • fresh mint to serve
  • salt and pepper to taste
